Alejo the owner of the farm belongs to the fifth generation of coffee farmers. He likes to experiment with different varieties and processes, thanks to which he is now able to offer excellent micro lots produced in his Hacienda Colima farm.
Finca Colima is a farm located on the edge of the Barva volcano. New coffee trees are planted in particularly fertile volcanic soil located at an altitude of over 1,200 meters. The soil benefits from a good organic substance and texture which produces a well balanced coffee with a rather chocolaty profile.
Coffee production began in America in the mid-19th century. It was around the same time that two pioneer families from Europe started a coffee business, the Spanish Castro-Jimenez family in Costa Rica and the German Kahle family in the Chiapas region of Mexico. Alejo belongs to the fifth generation of the Castro-Kahle family, who have been growing coffee on the slopes of the Poas Volcano in central Costa Rica for over 100 years.
They cultivate Caturra, Catuai, Geisha, SL28, Villa sarchi, Sarchimor, Obata, San Isidro and Venecia.
The family chose to conserve around 200 hectares of forest located above their coffee fields to preserve local biodiversity. They also purchased 1,500 hectares of primary forest on the Osa Peninsula in the south of the country.
Alejo has a real passion for the different varieties and processes of coffee and every year he engages in the innovation, combination, elaboration and refinement of his coffees just like an alchemist, this lot of Villa sarchi has been worked with the classic natural method.

In the cup this coffee is very sweet and hints of caramel, chocolate, green apple and apricot are evident.
